The first days of February sun bring forth white flowers and almonds. Some almonds will already have fallen to the ground before you start to harvest them. For this reason, the first thing to do is to collect the fallen almonds and store them in a basket.

A pole or rod is also required. You can hit the branches to make these stone fruits fall down. The almonds will fall onto the net and then it's easier to collect them up. This isn't perfect as some of the drupes may fall outside of or away from the fabric. You'll have to pick these up by hand later on.

Once you've got all your almonds together, it's time to process them. That is to say, it's time to separate the edible fruit skin from the seed. This is a fairly expensive process that is usually done by a special machine. But do not worry, you can peel the drupes by hand using a knife and, with a little patience, you'll get it done in no time.
